Vegan Mint Chip Ice Cream

I've been seeing a lot of ice cream recipes using coconut milk so I thought I'd give it a try too.

Ingredients:
14 oz coconut milk
1/2 c vanilla almond milk
2 tsp vanilla extract
3 tbs honey/agave
1/3 c fresh mint
1/4 c chopped chocolate/carob chips

In a blender, mix all ingredients except for the chocolate until the mint is broken up and everything is combined--about a minute or so.  Pour mixture into ice cream maker and let it do its magic!  I added the chocolate once the ice cream was nearly finished after about 10-15 minutes of churning.  Garnish with a sprig of mint, and you have your very own bowl of churned wonder.

I'm going home this weekend and I've been informed by my mom that I will be making every meal she eats, so get ready for some pictures.  Also I'm going to grab my sewing machine and extra craft stuff to bring up to Bellingham, so also get ready for some creation/craft pictures.  I'M SO EXCITED!!

My best friend Alexis recently told me about a nifty little site called Pinterest.  This site allows you to basically bookmark photos from blogs onto an online bulletin board.  I LOVE IT!  It's sweet because you can save what you like, so you don't forget it later.  I like it especially for recipes and craft ideas.  And did I mention you can also follow your friends' Pinterests?  Take a look.
